Quinoa Breakfast Bowl

Something hearty and healthy to fuel your adventures on the trail, crag, and everywhere in between, this quinoa breakfast bowl has it all. Dig in to a warm bowl of quinoa, coconut, and fruit and get fueled up right for the adventure ahead.

Ingredients

  • 1 Cup water
  • ½ cup quinoa 
  • ½ cup unsweetened coconut milk
  • 1 handful of dried fruit
  • 2tbsp pumpkin seeds
  • 1 handful of coconut chips
  • 2 tbsp of honey

Instructions

  1. Unpack and assemble MiniMo burner, and add 1 cup of water.
  2. Light MiniMo burner, ands add ½ cup of quinoa.
  3. Stir and bring to a boil, then lower the temperature to a simmer, cover with lid and cook for 15 minutes.
  4. Add ½ cup of unsweetened coconut milk, 1 handful of dried fruit, 2 tbsp of pumpkin seeds, 1 handful of coconut chips, and 2tbsp of honey.
  5. Stir together and enjoy.
